You may not be sprawled out on a beach in Capri this summer, but with an Aperol spritz in hand it’s pretty easy to pretend. The Instagram-able beverage is a perfect blend of bitter and sweet and the drinkable anthem of a warm sunny day.
The Henry has debuted its tasty take on the summer drink on its new Summertime Spritz menu which includes four spritzes: Grapefruit, Butterfly Plum, Strawberry, and Jane’s Aperol Spritz, a more classic take on the beverage.
“The Aperol spritz is a classic aperitif cocktail; it’s a little lower in alcohol, just enough to get you going on your evening,” says Mat Snapp, beverage director of Sam Fox’s restaurants.

Try out The Henry’s sophisticated take on the Aperol Spritz with the below recipe. You’ll be seaside in Italy in no time.
Aperol Spritz, provided by The Henry
- Splash of lemon juice
- Splash of simple syrup
- .5 oz. Vodka
- 1 oz. Aperol
- 1 Lemon wheel
- 1 Orange wheel
- 1.5 oz. Soda water
- Sparkling wine to top
Directions: Combine the lemon juice, simple syrup, vodka, Aperol and citrus in a cocktail shaker filled with ice. With a medium/heavy shake, shake ingredients. After shaking add soda water to shaker and pour contents including ice into a large wine glass. Top the glass off with sparkling wine and enjoy.
