Iconic Cocktail Lounge MercBar Completes Full Renovation

It just might be Phoenix’s best-kept secret. MercBar, a 23-year old cocktail lounge has quietly been the go-to for a luxe night of classic sips for years. Located in an under-the-radar location at The Esplanade in the Biltmore neighborhood, MercBar has just debuted a full renovation complete with a new look, amenities and menu items.

First opened in New York City’s SoHo neighborhood on Mercer Street, the original MercBar paved the way for its now solo location in Phoenix which opened in 1996 and has since hosted big names like Brad Pitt, George Clooney, Cindy Crawford and Michael Jordan. MercBar is led by owners Rick Phillips, a serial entrepreneur behind the Arizona Taco Festival and other restaurants and businesses, and John McDonald, restaurateur of Mercer Street Hospitality.

Hot on the heels of a $1 million renovation and remodel led by New York design firm Meyer Davis, the bar has plenty of new features. Still maintaining its speakeasy feel, the 3,000-sq.-ft. space features a seductive, sultry vibe with plush velvet seating, dim lighting, gem-colored decor and a glowing bar. Attracting the after-work crowd from the surrounding businesses, MercBar is primely located near the Biltmore’s top shopping and dining, perfect for pre- or post-dinner drinks, a quick cocktail or a long night of cozy conversation.

Cocktails range from $10 and $20 with classics like Old Fashioned and Tom Collins taking the main stage. A recent addition of tequila and mezcal has broadened the choices for spirited sippers even more. MercBar has also introduced a menu of bar snacks and small plates. Dig into addicting items like rosemary truffle popcorn, deviled eggs, Cutino Hot Sauce chicken satays and more.

Those looking for a new meeting space will be delighted with MercBar’s newest addition, the Copper Room. The beautiful 700-sq.-ft. private room has plush seating, antique black steel and glass hope doors, AV capabilities and more.

Other planned features include memberships with exclusive perks, high-level concierge service and access to high-profile events including private liquor lockers, spirit and wine seminars, spirit preview tastings and loyalty benefits. In 2020, MercBar will also be opening a wine and spirit retail shop called 151, the original address of its landmark Soho predecessor.
