Eden, the new rooftop bar and lounge at Kimpton Hotel Palomar Phoenix, is soon set to open to guests and the public for dining and socializing.
The reimagined hotel bar replaces LUSTRE Rooftop Bar with a relaxed, but energetic, poolside experience featuring private cabanas and firepit seating, plus an innovative food and beverage menu complete with an enhanced cocktail program.
Set to the backdrop of Downtown Phoenix’s skyline, the 5,000-square-foot space seats up to 153 guests in a vibrant setting that incorporates the colors and textures of Arizona’s desert surroundings with native plants complemented by pops of pink, teal and neutrals. The layout and design of the social desert oasis features a spacious bar as the focal point and a lounge-style eating area that contains shading from the sun, creating an indoor/outdoor feel.
As of this writing, Eden is set to open on Wednesday, January 25, according to its website.
Executive Chef Alexander Robinson has expertly curated a menu inspired by Coastal/Mediterranean cuisine that offers seasonal plates and tapas to share, including a variety of freshly prepared hummuses and salads, sandwiches and wraps, kebabs, lamb meatballs and more.
To complement Eden’s memorable dishes, mixologist and Lead Bartender Clint Spotelson brings guests a diverse collection of cocktails made with unique, high-quality ingredients such as house-made syrups, as well as a selection of wine, beer and non-alcoholic drinks that are just as enjoyable.
Guests will find many signature cocktails to choose from, including the Garden of Eden, a margarita made with serrano and cilantro-infused tequila, lime juice, agave nectar and Italicus, and the Surfer Rosa, a lower-ABV drink made with Cocchi Rosa wine, strawberry and apricot liqueurs, lemon, rosemary, and club soda.
