Skinny Summer Cocktails

I’m a drink snob… and by that I mean I don’t want to waste my calories on a cocktail unless it’s super dee-licious. On a recent trip to California, I told the waiter to surprise me with a drink. My only request: something not too sweet. He came back with a drink I’m still talking about… a healthy combo of coconut water, cucumber vodka, kiwi, lemon juice. So refreshing! I loved it so much I got the recipe…

1.5 ounces Effen Cucumber Vodka
1.5 ounces coconut water
½ ripe kiwi, mashed
¾ ounces lemon juice
¾ ounces simple syrup
Fresh cucumber wheel

So refreshing! And hydrating coconut water helps counter the dehydrating effects of alcohol

But you don’t need to go all the way to California to get a skinny cocktail: Sprouts Café at Camelback Inn has a whole healthy drink menu. My fave: the Pink Serenity Cocktail. This gem uses grapefruit-infused vodka + fresh herbs + watermelon for a party in your mouth – guilt free! Enjoy al fresco at the stunning Camelback Inn, or make it for yourself…

2 oz Belvedere Pink Grapefruit
3 oz fresh watermelon puree
½ a lime pressed
Splash of organic agave nectar
2 thyme sprigs

Combine first 4 ingredients in a cocktail shaker, add ice and shake vigorously. Strain over ice in a tall Collins glass. Rub thyme between your hands to break up oils, add to cocktail and stir to combine. Finish with a cube of fresh watermelon and enjoy!
