I fancy myself a baker, I just have one problem: I can’t seem to follow a recipe. If it calls for obscene amounts of butter or shocking amounts of sugar, I play mad scientist and make healthy swaps. Some of the butter gets replaced with Greek yogurt or heart-healthier coconut oil… white flour is replaced with whole grain flours like spelt, buckwheat, even teff flour… and sugar s replaced with fruit purees, maple syrup or healthier coconut palm sugar (it’s lower on the glycemic index). All this kitchen experimentation has resulted in many misses, but also some hits. Here’s one of my faves just in time for Valentine’s Day (and below that are more TDF healthy chocolate treats).
PSST: Cocoa which contains no fat or sugar (no joke), and it’s rich in calcium, iron, magnesium, potassium and even fiber (2 grams per tablespoon!). Plus it’s loaded with anti-aging polyphenols and heart-healthy flavanols. Sweet!
Chocolate Peanut Butter Muffins (makes 12 muffins)
INGREDIENTS
3/4 cup almond flour
1/2 cup whole wheat flour
1/3 cup cocoa powder
1 1/2 teaspoon baking powder
1 teaspoon baking soda
2 eggs
3 tablespoons natural peanut butter
¼ cup high oleic safflower oil
3/4 cup plain Greek yogurt
1/2 cup maple syrup
1 teaspoon pure vanilla extract
1 cup dark chocolate chips (optional)
DIRECTIONS
1. Preheat oven to 350 degrees. In a medium bowl whisk together dry ingredients (first 5 ingredients). In a separate large bowl whisk together wet ingredients (next 6 ingredients). Add dry ingredients to wet and mix together until just combined (do not over mix). For a little extra chocolate, stir in the optional chocolate chips until just combined.
2. Line a 12-muffin pan (or a 24-mini muffin pan). Scoop the batter into the tins about 3/4 full. 12-14 minutes at 350 degrees or until centers are just cooked through. Remove to cool.
