Don Guerra’s Barrio Bagel & Slice officially announced plans to open its doors in Gilbert in late spring 2025. The restaurant will offer a unique twist on fast casual dining, featuring a menu built around Barrio Bagels, Barrio Breads, and pizza by the slice.
The concept, which has already garnered attention for its focus on high-quality, locally sourced ingredients, aims to redefine the drive-thru experience, making it more than just a quick stop.
Don Guerra, a James Beard Award-winning baker, educator, and entrepreneur, has partnered with Oren Molovinsky, a nationally recognized restaurateur, farmer, developer, and contractor, to bring Barrio Bagel & Slice to life. Together, they aim to create a dining experience that is both community-focused and future-forward.
“We want our wholesome, high-quality, healthy foods to be accessible to our entire community,” Guerra said. “Barrio Bagel & Slice is the next step in the evolution of our mission to be community-supported and customer-centered, while also redefining fast casual dining.”
The restaurant features ample covered parking and has been designed with an inviting, retro-inspired atmosphere. Hand-painted murals from local artists like Signs by Kurt and Great Not Good Co. add personality and charm.
The fast casual concept emphasizes convenience for on-the-go diners – there will be mobile ordering, third-party delivery, and a streamlined, efficient drive-thru experience available. The restaurant will also be the only place where customers can purchase freshly made bread daily.
Barrio Bagel & Slice will feature a variety of fresh, customizable Sonoran-style bagels in different flavors and toppings. Breakfast options will include bagel sandwiches, avocado toast, and combo meals. The lunch menu offers signature pizza slices, including classic margherita, pepperoni, and more unique choices like potato and onion, “verde,” vegan pesto, even a pizza bagel.
