During Girl Scout cookie season, it is almost impossible to say no to purchasing a box, or maybe even a dozen boxes, of these tempting cookies. Saying no to a sweet Girl Scout is out of the question. So, what are you expected to do with all the extra boxes?

1. Samoa Cupcakes

2. Tagalog Peanut Butter Parfaits
Ingredients:
For peanut butter mousse:
- 4 ounces cream cheese, softened
- 1/2 cup creamy peanut butter
- 1/2 cup plus one tablespoon confectioners’ sugar
- 1/4 teaspoon pure vanilla extract
- 2 tablespoons heavy cream

3. Do-Si-Do Oatmeal Sandwich Cookies
Ingredients:
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, at room temperature
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract

Ingredients
- 9 ounces of Thin Mints (I used the whole 10 oz package of Keeblers Grasshopper Cookies)
- 4 ounces of cream cheese at room temperature
- 12 ounces green candy melts, divided (I used Wilton brand)

- 1/2 c semi-sweet chocolate chips
- 1 Tb butter

- 1 cup of popcorn kernels
- 3 cubes melting white chocolate (or 1/2 cup of melting chips)

Ingredients:

- 2 Tbsp Butter, melted and cooled
- 1 1/2 cup Heavy Whipping Cream

8. Do-Si-Dos Pie
Ingredients:
For the Crust:
- 2 boxes Do-Si-Dos Girl Scout Cookies (3 sleeves for crust, 1 for top)
- 4 ounces rolled oats, toasted in the oven and cooled
- 4 tablespoons unsalted butter, melted and cooled

- ⅓ cup dry lemonade powder
- ¼ cup granulated sugar
- 1 egg, plus 2 yolks
- 1 teaspoon vanilla
