New York City’s Carbone takes on the fast-pace Vegas Strip at the luxurious Aria Resort and Casino. The Greenwich Village restaurant that took the New York City’s dining scene by storm debuts in the entertainment capital of the world and is adding more flavor to its menu and spicing up the design of the new location.
Through reinvigorating classics of Italian-American cuisines with remarkable table side service, world-class ingredients and award winning culinary artistry, Carbone makes Major Food Group’s first expansion outside of the Big Apple and onto the famous Las Vegas Strip.

Ken Fulk, a San Francisco based designer, created an atmosphere that infuses theatrical elements with Italian vibes to create a one-of-a-kind experience for foodies and guests of the Aria Resort and Casino.
The main dining room is inspired by the Milan Opera and features a breathtaking Murano Glass Crystal Chandelier, originally used at a Ferrari showroom in the 1960s. Decked with modern artwork by renowned artists, Carbone in Las Vegas aims to elevate its sophistication with pieces from Julian Schnabel, Richard Serra, David Hockney along with many others.
Carbone Las Vegas challenges popular restaurant trends by elevating Italian-American cuisine into the fine dining sphere. Using the finest products from all around the world, Carbone’s dishes transform familiar cuisines by adding mouthwatering elements to traditional recipes. Carbone’s famous Spicy Rigatoni Vodka, Veal Parmesan, Lobster Fra Diavola and Meatballs are featured on the menu along with seasonal specialities. The delicious menu will also feature dishes exclusive to the Las Vegas location.
Vintage Rum Carts come around at the end of your lavish meal, allowing guests the opportunity to taste unique rums from around the world. These rare rums come with a piece of history connecting restaurant goers with the past. Guests can drink the famous Appleton 50-Year Rum that was created when Jamaica hand-selected its best barrels of rum to age for five decades in order to help celebrate 50 years of independence.
Carbone also prides themselves with original classic cocktail recipes, which helps transform an ordinary Mai Tai into a savory drink for guest. Not only do restaurant guest have an exquisite selection of classic cocktail recipes, but also have a selection of over 550 labels of wine to choose from, enriching every meal.
