There are two things synonymous with the holidays: baking and hot cocoa. So why can’t you have your cake and eat it too? Here is a great recipe to combine the two…without the stress. Cupcake pros from Frosted Frenzy, a Valley-based mobile and delivery gourmet cupcake company, share their favorite holiday cupcake baking recipe that combines the comfort of hot coca, the seasonal favorite of peppermint and the beauty of a Pinterest-inspired cupcake that you can do right in the comfort of your own kitchen. Frosted Frenzy is owned by two moms, Tami Hatch and Candy Shipley, who say that they are passionate about the family baking recipes that they use, “as two moms, we have tried-and -true baking recipes that have been passed down in our family for generations; from our kitchen to yours, we hope you enjoy these cupcakes as much as we do.” Here is Candy and Tami’s homemade secret recipe for peppermint hot cocoa cupcakes:
1. Start with a homemade chocolate cake batter made with a high-quality chocolate. We recommend using Valrhona. It really brings out that deep rich chocolate flavor.
2. Once you bake your cupcakes, let them cool. Next, core the center of your cupcakes and add hot fudge sauce; we enjoy using Callebaut chocolate for our fudge. This smooth dark chocolate tastes amazing compared to other brands.
3. Next, prepare your peppermint flavored cupcake icing. For our icing, we use a European butter for whipping our buttercream and then add a few drops of peppermint extract while mixing the icing to get a cool peppermint flavor.
4. Now it’s time to decorate and add the final touches to your cupcake. We tint our buttercream icing a light pink using Americolor food coloring to signify the peppermint flavor. We also use a large star tip (4CS) to create the pretty ruffle design. Next, sprinkle your icing with chocolate shavings or sprinkles; you can also drizzle your extra fudge over the top for added chocolate flavor. Add a peppermint stick for fun, just like you would with a warm cup of hot cocoa and enjoy.
