A typical day in my life includes…
I wake up and watch about an hour of TV because it takes me a little bit to get going. I leave the house head to Lux Central and get my iced Americano. Then it’s off to the restaurant. I get to the restaurant about 10:30am and it’s where I spend the rest of the day. I get home about 10:30-11pm, shower again, relax and off to bed. Nothing too crazy.

my grandparents, who passed away years ago. I have so many awesome memories with them, like cooking with my grandma and golfing and building tree houses with my grandpa. There was always Sinatra playing at dinnertime. As an adult I would love to experience that one more time.

I have two new business partners that push me in their own ways that bring out a fire in me to push forward to be a better business owner, better leader, and better man. I have a group of best friends that live throughout the country. We have been friends for 20 plus years. Every year we do a vacation together, just one day with them would be perfect.

“I love eating out. It’s one of my favorite pastimes. I love the whole concept of a restaurant. I love the idea of sitting down to eat. I love the idea of someone choosing some wine to go with the food. I love the idea of smelling it, of drinking and then tasting and savoring the food. I just love it. As a customer I’m the simplest guy to cook for. I would never apply the same mental torture I give myself as a chef when I’m eating out, because I’m off duty. For me, sitting at the table is a sacred moment because you’re sharing and talking, laughing, and joking with your loved ones. It’s not about who you are as a chef. I can take my jacket off and become a customer very easily. I would never criticize another chef, ever because it’s not my job. I’m just a cook.”
