CIELO at the ADERO Scottsdale Resort, Autograph Collection offers a new experience for aspiring sommeliers at their wine tasting dinner on Wednesday, August 30 at 6:30 p.m. The four-course tasting menu developed by Executive Chef Chris Kight will include dinner and wine pairings from DAOU Vineyards in California. Each course uses locally-sourced ingredients to pair different flavors and geographies with complementary wines.
The dinner starts with a blini and caviar as an amuse-bouche, paired with DAOU 2021 Rosé. The first course features seared scallops and watermelon, with jalapeño mousse, and dandelion greens. Flavors of fennel, shallot, radish, basil and sherry accompany a 2022 Sauvignon Blanc. The second course includes lobster tail with fava beans, stewed tomatoes and celery leaf salad. The juicy lobster is paired with a 2021 DAOU Reserve Chardonnay. The main course is Japanese Wagyu cooked to order with potatoes, eggplant, shallot and bordelaise paired with a 2021 DAOU Reserve Cabernet Sauvignon. Finally, the meal concludes with grilled white peach and buckwheat streusel finished with basil-infused mascarpone and white balsamic syrup. The sweet flavors are paired with a 2021 Pessimist Red Blend. The wine tasting dinner is $130 per person and reservations can be made on OpenTable here or by calling 480.333.1900.
