This spring, a new culinary destination is set to open its doors at the Grass Clippings Rolling Hills Golf Course in Tempe: Glenrosa. Created by the Grass Clippings team and helmed by James Beard-nominated chef Samantha Sanz, Glenrosa will offer an authentic taste of Sonoran-inspired cuisine inside a 5,800-square-foot restaurant designed to deliver a dining experience that captures the essence of the desert landscape.
Glenrosa is an integral part of Grass Clippings Rolling Hills, one of the Southwest’s newest and most exciting golf experiences. With its dual-purpose concept, the restaurant will cater to both food enthusiasts and golf lovers, adding an essential amenity to the evolving property.
Chef Samantha Sanz, known for her work at acclaimed Arizona institutions like the Four Seasons, Virtu Honest Craft, and Sanctuary Camelback Mountain, brings her passion for Mexican cuisine to Glenrosa. This restaurant marks the first one Sanz has crafted from the ground up, and she sees it as a personal endeavor.
“This is the Mexican cuisine I grew up eating and cooking in Sonora,” she said. “Authentic dishes made with clean, fresh, and local ingredients.”
The menu will feature casual options like burgers, Sonoran hot dogs and tacos, to more indulgent, family-style platters such as ember-roasted chicken and tomahawk steaks. Glenrosa uses seasonal, farm-fresh ingredients in all its offerings, which extends beyond the kitchen to the cocktail menu. The restaurant will feature drinks made with freshly squeezed citrus and fruit, house-made agave syrups, and scratch mixes.
For those looking to experience the restaurant before the full launch, the Glenrosa Bar is open daily from 10 a.m. to 11 p.m., with Happy Hour from 4 to 7 p.m. The bar, situated next to the 15,000-square-foot practice putting green, also offers live music and lawn games.
“This area has always been a gathering point, dating back to the Hohokam people, and famously with Hayden’s Crossing in Tempe, because it was one of the few places where you could cross the Salt River,” Grass Clippings Co-founder Jake Hoselton said. “Today, we’re proud to honor this history with authentic Sonoran Desert cuisine and by welcoming people across the Valley to this scenic setting.”
Glenrosa is set to elevate the experience at Grass Clippings Rolling Hills Golf Course, which opened in 2023 following a $15 million renovation. In addition to Glenrosa, upcoming amenities include a refurbished golf shop and clubhouse, an activity lawn, a video display, and a venue for live music, markets, and events, with full completion expected by 2025.
