Calling all cookie lovers! Insomnia Cookies plans to open its third Arizona location in the Alhambra area near Grand Canyon University in the fall. The chain, which was created in founder Seth Berkowitz’s dorm room at the University of Pennsylvania in 2003, is unique in that customers can stop into the shop during the day and well into the night, as most shops are open until 3 a.m. – perfect for any late-night sweet treat craving. This makes Insomnia Cookies the go-to place for late-night cookie cravings in Phoenix.
Whether you want only one cookie or a hundred, Insomnia offers a wide variety of flavors. Classics like oatmeal raisin, peanut butter chip, snickerdoodle, sugar, and white chocolate macadamia are included on every menu.
Insomnia also offers deluxe cookies: extra big with even more mix-ins. From the Confetti, Oatmeal Chocolate Walnut, and Salted Caramel to the Chocolate Peanut Butter Cup, S’mores, and Triple Chocolate, Insomnia has a treat made for every palate. Vegan options are also accessible for those with dietary restrictions.
In addition to the classics and specialties, the shop bakes seasonal cookies that are sure to pique your interest. Take the Gold Medal Lemon Filled Classic, for instance: a sweet and fluffy Italian-inspired ricotta cookie filled with a bright lemon curd inspired by the Olympic Games. Or the PB&J Filled Classic made with JIF peanut butter and – you guessed it – grape jelly, a fun cookie inspired by the back-to-school season.
The menu at Insomnia also boasts cookie cakes, brownies, minis, ice cream pints and ‘wiches, a combination of two scoops of ice cream sandwiched between two warm cookies. Guests can also build their own box of treats, choosing from a variety of cookies, brownies, and ice cream flavors. Insomnia also has merch and is available to ship nationwide.
The new store, located in the Alhambra neighborhood, is currently hiring part-time crew members, delivery drivers, and shift leads. If you can’t wait for the new location, Insomnia has three other shops ready to serve in Central Phoenix, Tempe, and Tucson. For more information, visit insomniacookies.com.
