Sandfish Sushi and Whiskey has launched an exciting new menu that offers a fresh take on Japanese cuisine. Under the creative direction of award-winning Chef Engin Onural, the revamped offerings will delight locals and visitors with their vibrant flavors and unique twists.
Chef Onural’s new menu is a testament to his cultural heritage, global travels, and the dedicated team that he describes as family.
“I draw inspiration from my cultural heritage, my travels around the world, and the incredible passion of my dedicated team, who feel like family,” Onural said. “Together, we craft a menu that reflects a fusion of flavors and our stories.”
Among the new additions are weekday exclusives like the short rib sandwich and chicken karaage. Sushi lovers can look forward to innovative new creations, including the 72-Hour KSR nigiri, made with Korean short rib, and enticing rolls such as the Essensu No Hamachi (essence of yellowtail) and Umami Bin’naga (savory albacore). Other notable rolls include the Netsui Sake (spirit of salmon) and The Blue Butterfly Roll.
“Palm Springs is home to our first Sandfish, and like Phoenix, it is a beautiful desert landscape which inspired my search,” Onural said. “Phoenix is perfect because it’s a vibrant city with cultures and culinary experiences. The city’s dynamic energy and appreciation for innovative cuisine perfectly align with our mission to offer something truly unique and nourishing.”
The new menu showcases a delightful fusion of global influences and traditional Japanese flavors. Highlights include KFC (Korean Fried Cauliflower) bao buns with assorted pickles, cucumbers, mayo, and sesame seeds. The grilled short rib, a 48-hour marinated dish, is accompanied by ssamjang, garlic chive oil, fried perilla, soy garlic, and seasonal mushrooms.
Diners can also enjoy blue crab zushi, which features pea flower rice topped with a blue crab mix, zuke butter, Thai basil oil, a lemon wedge, and Fresno chili. The broccolini and baby bok choy dish is sautéed with Fresno chilies and drizzled with honey zuke, topped with verde crema and toasted pistachio crumble.
Sandfish Sushi and Whiskey also introduced a “Last Catch” reverse happy hour on Fridays and Saturdays from 9 to 10:30 p.m. This late-night offering allows guests to enjoy exclusive menu items and discounted cocktails. The restaurant also continues its existing happy hour from 4:30 to 6:30 p.m. on Fridays and Saturdays and all day Sundays through Thursdays.
