Scottsdale’s New Destination for Elevated Indian Cuisine

Scottsdale is about to experience a new culinary gem with the debut of Indibar. Officially opening on March 23, Indibar invites guests to indulge in an exciting fusion of traditional Indian flavors with modern techniques. This dining destination is the brainchild of Masti Hospitality and features the expertise of renowned chefs Nigel Lobo and Ajay Negi.

Negi’s signature tandoor creations are at the core of Indibar’s culinary offerings. These dishes pay homage to India’s ancient cooking methods while incorporating contemporary flair. With years of experience and a passion for authentic flavors, Negi has crafted a menu that blends creativity with tradition, offering a dynamic exploration of India’s diverse culinary landscape.

Guests can savor the Afghani murgh, a delicately spiced chicken infused with cardamom and cream, offering a rich and aromatic flavor. For meat lovers, the lamb chops, marinated with mint, coriander, and kaffir lime, are grilled to perfection, delivering a smoky flavor. Seafood enthusiasts will be delighted by the tandoor-fired salmon, enhanced with yuzu, yellow chili, and kasundi mustard. For a more luxurious experience, check out the tiger prawns, infused with labneh, Kashmiri red chili, and dried fenugreek leaves.

Vegetarian options include avocado and asparagus, seasoned with hand-ground masala and black salt and finished in a charcoal tandoor. Romanesco, another standout, is marinated with yogurt, saffron, and parmesan.

“At Indibar, we aim to redefine the perception of Indian cuisine by crafting dishes and experiences that go beyond the expected,” Executive Chef Nigel Lobo said. “Our approach challenges conventions and breaks stereotypes while staying deeply rooted in tradition, offering a fresh yet authentic take on Indian cuisine.”

The menu also features hamachi crudo, ragi papdi chaat, pork ribs vindaloo, and an array of house-made chutneys, dals, rice, and freshly baked Indian breads.

Managing Partner Jon Rodrigues and Sommelier Shanaya Fastje created the cocktail and wine program. These beverages blend house-infused spirits, bold spices, and India-inspired ingredients. Signature drinks like the 24K Negroni, made with Empress 1908 Elderflower Rose gin, Breckenridge Bitters, and dry vermouth, give a creative spin to a classic favorite.

The grand opening will take place on March 23 at 5 p.m. Guests will be treated to an exclusive first taste of the restaurant’s dishes and cocktails, a fun photo booth, and the opportunity to meet Chefs Lobo and Negi. For more, visit theindibar.com.
