Two New Culinary Concepts Head to Phoenix

Episcope Hospitality is bringing a restaurant and coffee café to Phoenix this fall. The hospitality group’s new establishments will be in the Biltmore neighborhood.

Hearsay, the restaurant, and Perks, the coffee café, will both be the newest destinations in the Valley for connecting, working, or gathering. They will become the centerpieces of the Esplanade, which is currently undergoing a $50 million renovation.

Chef Dereck Dillon, a Phoenix native, will lead Hearsay’s culinary program. He developed his skills in kitchens with groups like Hilton Phoenix Resort at the Peak, Bartolo’s, Saucy Pasta, and more.

Episcope partner Ryan Gaudin designed the cocktail program. He is widely known for his work at Restoration Hardware, which combines dining, bars, and retail.

Highlights include a fully electric kitchen to match Episcope’s commitment to sustainability and innovation and one of Phoenix’s first-ever listening rooms. Music enthusiasts can savor craft cocktails and bites while enjoying modern sounds from state-of-the-art equipment in an acoustically tuned room. The atmosphere will be a blend of modern and classic, with a menu that suits any cravings.

“We’re not just serving excellent food,” Morton said. “We’re also providing a meeting ground for the movers and shakers of Phoenix — where spontaneous connections happen and business gets done.”

Perks will also strive to attract a wide customer base and offer coffee and teas for every patron. The shop’s design is inspired by America’s best bars, where alcohol is substituted for premium coffees and teas from local roasters.

“I’ve never understood why most coffee shops only feature one brand. If coffee shops were taverns, they would miss the opportunity to feature all the great locally-made producers and styles to accommodate all tastes,” Morton said.
