The Rum Bar at Phoenix’s popular The Breadfruit restaurant unveiled a new happy hour this summer that’ll have your eyes peeled to the clock. The “a-RUM-a Therapy” punch social hour is availalble every weekday at the Downtown Phoenix bar. From 5 to 7 p.m., the Rum Bar will feature a $5 rum punch and a specially priced food menu. To get you in the mood–or maybe because 5 p.m. can’t come fast enough–here are two rum-tastic cocktail recipes from the Rum Bar.
The Watermelon Daiquiri
2 1” watermelon cube
½ oz fresh squeeze lime juice
½ oz cane syrup (1 part raw sugar, 1 part water, simmer until reduced to syrup consistency)
1 ½ oz Flor de Cana 4 year extra dry white rum
1 mint leaf
In a mixing glass, muddle watermelon, add remaining ingredients, ice and shake vigorously. Strain into a chilled martini glass and garnish with mint leaf.
Strawberry Basilica
3 strawberries
3 basil leaves
½ oz fresh squeezed lemon juice
½ basil syrup (1 part raw sugar, 1 part water, 15 basil leaves, simmer until reduced to syrup consistency)
1/8 oz Frenet Branca
2 dashes of lemon bitters
1 ½ Mt. Gay Special Reserve Rum
In a mixing glass, muddle two basil leaves then muddle two strawberries, add remaining ingredients, ice and shake vigorously. Strain over ice in a collins glass, garnish with basil leaf and strawberry.
