Mole-Dusted Fish Tacos
3 2-oz. Seasonal sea bass
Mole seasoning, as needed (see recipe below)
3 T Goat cheese
Shredded cabbage, as needed
Mini flour tortillas, as needed
Guacamole
Roasted corn, as needed
Refried beans, as needed
Queso fresco, as needed
Mole Powder:
1 C Chocolate nibs
¼ C Cumin seeds
½ tsp. Garlic powder
1T Oregano leaves, dried
1 T Red chili peppers, dried
4 Dried pasilla peppers
A few coriander seeds
¼ T Salt
Roast the chocolate nibs at 400 degrees for about 30 minutes or until they get dark in color. Let them cool for about an hour. Put about one-fourth cup of the roasted nibs into a coffee grinder, along with the rest of the ingredients, and grind until they are superfine.
